Binalongganisa: A Special Treat You Should Taste in Binalonan

In the Philippines, longganisa (Filipino version of the Spanish sausage called longaniza) is staple in every family meals. The taste of longganisa is unique to each region or province as the locals showcase their creativity and locality with their own recipes. With this, our town also offers its own!

As a local of Binalonan, our own version of longganisa has always been my favorite viand in every meal. Being made from fresh pork with various organic condiments such as black pepper and garlic, local longganisa-makers offer a different recipe to consumers. Truly, Binalonan longganisa has a unique meaty and garlicky taste that you can’t resist but to take a bite of it or eat more! Even my Baguio friends will agree with me. In fact, when I was still a college student in Baguio, my housemates and classmates always request for Binalonan longganisa as my “pasalubong”. With its salty flavor, it is perfect to dip it in vinegar, banana ketchup, or even with mixture of soy sauce and calamansi!

Moreover, it’s no surprise that the production of the Binalonan longganisa had grown through the years. Each meat vendors at the market always assure that they serve the original delicious recipe of longganisa that had been passed from one generation to another. Various restaurants within the vicinity of the town also offer cooked meals with longganisa variants. The Binalonan administration even established a Longganisa Festival in 2015 to address the booming industry of longganisa in the municipality and for locals to showcase different cuisines that can be made from it.
